01 - Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
02 - Carefully open each pitted date and insert one roasted almond into the center. Gently close the date around the almond.
03 - Encase each filled date with a half slice of bacon, securing with a toothpick if preferred.
04 - Place the bacon-wrapped dates seam-side down on the prepared baking sheet.
05 - Bake for 18 to 20 minutes, turning once halfway through, until bacon is golden and crisp.
06 - If using, drizzle with honey and sprinkle with black pepper immediately after baking. Let stand 5 minutes before serving.
