01 - Preheat oven to 375°F and line a baking sheet with parchment paper.
02 - Combine mozzarella and cream cheese in a microwave-safe bowl. Microwave for 1-2 minutes, stirring every 30 seconds, until melted and smooth.
03 - Add almond flour, baking powder, and salt to the cheese mixture. Mix thoroughly to combine.
04 - Add the egg and mix until a soft, sticky dough forms using a spatula or your hands.
05 - Place dough between two sheets of parchment paper and roll into a ¼-inch thick rectangle.
06 - Move the dough with the bottom parchment onto the prepared baking sheet.
07 - Mix melted butter with minced garlic and parsley in a small bowl. Brush half over the dough.
08 - Bake for 15-18 minutes until golden brown.
09 - Remove from oven, brush with remaining garlic butter, and sprinkle with Parmesan if desired. Slice into 8 breadsticks and serve warm.
