01 - Preheat oven to 350°F (175°C). Lightly grease a 9-inch baking dish.
02 - In a large bowl, toss apples with granulated sugar, lemon juice, and cinnamon. Spread mixture evenly in the prepared dish.
03 - In a separate bowl, combine flour, light brown sugar, and salt. Add cold cubed butter and blend with pastry cutter or fingertips until coarse crumbs form.
04 - Fold in chopped pecans and vanilla extract until evenly incorporated.
05 - Distribute pecan crumble mixture evenly over apples. Bake for 35 minutes, or until topping is golden brown and fruit is bubbling.
06 - Allow to cool for at least 10 minutes before serving. Present warm, optionally accompanied by vanilla ice cream.
