01 - Preheat oven to 350°F. Line a 9x13-inch baking sheet with parchment paper and lightly grease.

03 - In a separate bowl, beat eggs, milk, melted butter, and vanilla extract until smooth.
04 - Pour wet ingredients into dry ingredients and mix until just combined. Do not overmix.
05 - Spread batter evenly onto prepared baking sheet. Bake for 12-15 minutes until cake springs back when touched. Cool completely.
06 - Whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
07 - Gently remove cooled cake from pan and place on clean surface. Trim edges for neatness.
08 - Spread whipped cream evenly over cake, leaving a 1/2-inch border along one long side. Sprinkle diced strawberries over cream.
09 - Starting from opposite long side, tightly roll cake using parchment paper to guide. Refrigerate for 20 minutes to set.
10 - Slice rolled cake into 8 even pieces. Top each with strawberry slice and mint sprinkle. Serve chilled.
